Creamy coconut heaven cake


Mine and my family's favourite coconut cake recipe is here!

Vegan, gluten free, sugar free, ORGANIC - cleanest cake for the children and of cause for us, too.

Make this healthy yummy cake for your special people on their special day ♥♥♥





*For 28cm size pop up tin
(I use a very shallow tin, please adjust the amount of ingredients if you need to)

Get your ingredients (source locally and use certified organic)

Base

1 1/2 cup   Almonds
1 cup  Brazil nut or Pecans
1/2 cup Grounded flax seed
2 tbsp Hemp nuts

1cup Your favourite dry fruit mix (I use Sultana and Apricot)
1 tbsp Goji berry
Pinch of salt
2 tbsp filtered water
3 tbsp coconut oil
*Option - 1 teaspoon of Spirulina or 1 teaspoon of raw cacao powder or both if you like. 


Filling

1 1/2 cup Cashew & Macadamia nuts 
(If you want to make lighter taste you can use bananas instead) 
1 tbsp  Pure vanilla extract
1  Fresh Coconut (juice & meat) or 1 can Coconut cream
1/2 cup Extra virgin coconut oil
1/2 cup Coconut butter or Macadamia butter
1 tbsp Pure vanilla extract
2 tbsp Maple or Agave (I like to use very small amount of sweetener as both the base and topping will be sweet anyway)


Let's cook


Base

1) Grind nuts in the food processor or powerful blender till they become fine, add the rest of ingredients and blend well.

2) Tip the base mixture into the pop up tin. Spread out evenly, firm & thin. 



Filling

1) Same process as the base. Grind nuts in the food processor or powerful blender till they become fine.

2) Add the rest of ingredients in and blend well.

3) Decorate with your favourite colourful fruit and put it in the fridge for a couple of hours.
