Creamy coconut heaven cake


Mine and my family's favourite coconut cake recipe is here!

Vegan, gluten free, sugar free, ORGANIC - cleanest cake for the children and of cause for us, too.

Make this healthy yummy cake for your special people on their special day ♥♥♥





*For 28cm size pop up tin
(I use a very shallow tin, please adjust the amount of ingredients if you need to)

Get your ingredients (source locally and use certified organic)

Base

1 1/2 cup   Almonds
1 cup  Brazil nut or Pecans
1/2 cup Grounded flax seed
2 tbsp Hemp nuts

1cup Your favourite dry fruit mix (I use Sultana and Apricot)
1 tbsp Goji berry
Pinch of salt
2 tbsp filtered water
3 tbsp coconut oil
*Option - 1 teaspoon of Spirulina or 1 teaspoon of raw cacao powder or both if you like. 


Filling

1 1/2 cup Cashew & Macadamia nuts 
(If you want to make lighter taste you can use bananas instead) 
1 tbsp  Pure vanilla extract
1  Fresh Coconut (juice & meat) or 1 can Coconut cream
1/2 cup Extra virgin coconut oil
1/2 cup Coconut butter or Macadamia butter
1 tbsp Pure vanilla extract
2 tbsp Maple or Agave (I like to use very small amount of sweetener as both the base and topping will be sweet anyway)


Let's cook


Base

1) Grind nuts in the food processor or powerful blender till they become fine, add the rest of ingredients and blend well.

2) Tip the base mixture into the pop up tin. Spread out evenly, firm & thin. 



Filling

1) Same process as the base. Grind nuts in the food processor or powerful blender till they become fine.

2) Add the rest of ingredients in and blend well.

3) Decorate with your favourite colourful fruit and put it in the fridge for a couple of hours.

Chia pudding with super topping


No need blender, food processor, dehydrator, or any of those special rawfood tools to make this. Perfect easy, quick, simple and full of goodness snack ever!

I think chia pudding is a one of the most popular superfood snack this days.

Chia is high in fibre, protein, vitamin B and plant based omega which helps lower cholesterol also  the protein in chia is essential to build up a strong immune system, for cell regeneration which helps healthy muscles, hair, skin and nails. 

Beautiful skin, strong immune system, healthy digestive system, and makes yummy easy yet powerful snacks. It is a perfect superfood to have in your daily diet.







Get your ingredients 


1 cup Chia seeds
2 cups Almondmilk or Ricemilk
1 cup Coconut cream
1 teaspoon Pure vanilla extract
2 tablespoons Sultanas, Goji berries & chopped dried figs

2 teaspoons Cinnamon & Mesquite powder

*Goes well with any fresh or frozen fruit. 


Let's soak


Mix chia seeds, almond milk, coconut milk and vanilla in a glass jar and stir really well, add sultanas, goji, figs in leave it on the kitchen counter overnight (During the warmer season we keep it in the fridge overnight)

When its ready mix cinnamon & mesquite powder in adjust the thick ness with almond milk also you could add Maple or stevia as sweetener.

Serving  

We love using Buckinis deluxe ( by Loving earth) as topping. It's got everything in it, so easy to use and make any of your dishes even more special and yummier!





Otherwise simply add some nuts, fruit, raw chocolate cream...etc 

It makes delicious quick cake by putting some on the gluten free bread (by Sol bread) or buckwheat pancakes with a few pice of fresh fruit!







Our kids love this for their afternoon tea at the beach & skate park so do we, it's our favourite snack for after surf ♡ simply just pack the pudding and topping mix in the glass container, we often add some boost powder (by Sixsense organic) to take our snack to next level!

Super easy RAW chocolate fudge!


Here is an amazingly easy and simple raw chocolate recipe.

If you are craving sweets, breastfeeding / busy mama or just purely sweet lovers, make them lots and store in your fridge! So many more benefits than eating normal chocolate and also guilt free ;) 

Use organic ingredients as much as possible, make them with lots of self love. 

甘いものが我慢できない、チョコレート依存症、授乳中、お疲れなママ、そしてただ単にスイーツラバーな人々 簡単に作れるこのローチョコレートを作り置きして冷蔵庫に保管しておくと、『どうしても甘いものが食べたい』と言う時や、とっさのゲストなどにとっても役立ちます。
メインストリームの砂糖、乳製品、保存料など、たくさんの不要なものが入ったチョコレートを食べるよりも是非このクリーンなで ミネラルたっぷりなチョコレートにシフトして行ってみて下さい。

出来る限りオーガニック、添加物の入っていない材料を選ぶのがベスト。自分自身へのご褒美に!

Ingredients


1/2cup Melted coconut oil1/2cup Soaked pitted dates (I used sultanas& apricots)1/4cup Raw cacao powder1/4cup Chopped almonds1/4cup Chopped walnuts2tbsp Shredded coconutOptions*1tsp Pure vanilla extract1tsp Cinnamon powderHandful Goji berries1tbsp Hemp nuts


材料


1/2cup ココナッツオイル (溶けた状態)
1/2cup 水に漬けておいたデイツ 
(私はソルタナと、アプリコットを使います)
1/4cup カカオパウダー
1/4cup 刻んだアーモンド
1/4cup 刻んだくるみ
2tbsp ココナッツファイン

*オプション*
小さじ1 ピュアバニラエクストラクト
(天然バニラエッセンス)
小さじ1シナモンパウダー
一握り ゴージーベリー
大さじ1 ヘンプナッツ

Methods

1) Place the melted coconut oil, dates and cacao into the food processor or blender and process until smooth.

溶けた状態のココナッツオイル、デイツ、カカオをフードプロセッサー、もしくはブレンダーに入れ、スムーズになるまでブレンドする。

2) Stir in the remainder of the ingredients, place the mixture into a baking sheet lined loaf pan and into the freezer it goes for about thirty minutes.


残りの材料を木べらやスプーンで混ぜ合わせ、クッキングシートをひいたオーブン皿などの容器に流し込み、冷凍庫で30分間冷やす。


3) Slice into small squares and store in the fridge.


お好みのサイズにナイフでカットし、密閉容器もしくはジップロックなどにいれ、冷蔵庫で保管。

I believe that the cleanest, yummiest and most nutritious crackers are homemade raw crackers!

I have been so attracted & addicted to raw food since I met this amazing raw food chef Sarmado Sibley in Byron Bay 2009. I had an unexpected life changing experience with my first private raw food class with him. Since that unforgettable day when we cooked and share a special raw food course together, I find myself still making the same amazing crackers for me and my family.

I thought it would be lovely to share this beautiful recipe and more with everyone as Sarmado has released his FREE e-recipe book on his website Raw love life

Cashew cream cheese


We love having raw crackers with this easy, tasty and vegan cream cheese!
Great with anything, veggie sticks, raw zucchini pasta or any kind of pasta, use as a paste for the wrap or sandwiches ;)

3 cups  Cashews
1/2 cup  Lemon juice
1juice  Lime
1/2 cup  Spring onions
1 tsp  Paprica powder
1tsp  Turmeric
1/2 tsp  Salt
Option - 1 tsp savoury yeast
Option - filtered water to adjust the consistency.

Blend all ingredients together until smooth, enjoy adding deferent ingredients to experiment and make your own special flavour!
